The story behind the Leopard Caturra

Santiago Londono and his team at Mallorca Estate prioritize environmental preservation, using an agro-ecological approach with shade-grown coffee and resilient landscape design. They initiated a sustainability program inspired by Ana Primaveci’s concepts in 2003.

The Estate spans 186 hectares, with 134 hectares dedicated to caturra, gesha, and yellow bourbon coffee. 200 local workers join during harvest season, sharing Santiago’s belief in coffee as an art and science.

Santiago’s passion for coffee science drives experimentation in fermentation, drying, and stabilisation methods. This pursuit aims for unexpected flavours, complex acidities, and sweetness while maintaining consistency.

The property has 18 protected springs surrounded by conservation forests. Water used on the farm undergoes filtration and treatment and given back to the land for environmental responsibility.

Willy’s Beans proudly offers Mallorca Estate’s specialty caturra, with a SCA score 84.5 everyday at our warehouse. We showcase Santiago’s work with our specialty milk-based coffees and filter.
